You may have noticed that I have a real obsession with matcha tea. A part of its nutritional benefits and its energizing properties, matcha has a truly inimitable flavor. For this reason, even if it is a matter of revisiting a classic recipe of Italian cuisine, it is worth it. I took tiramisu and decided to give it a green tea spin by replacing espresso with matcha green tea, an original and tasty dessert. The proof is in the pudding!
Ingredients (4 people)
250g of mascarpone 50g of cane sugar 70g of egg whites 2 egg yolks Rice biscuits Matcha q.b. Water q.b.
Method
First whisk the mascarpone with the sugar. Then pasteurize egg yolks in a water bath (or buy some pasteurized yolks), using a whisk to get the yolks whipped and creamy. When the yolks are ready, add them to the mascarpone and sugar mixture and whisk until it become frothy. After, whisk the egg whites until stiff and incorporate, stirring gently from bottom to top. Now, add matcha until you get your favorite color and flavor (I used about 3 teaspoons).
Prepare matcha by heating water (about 100ml) and dilute the tea powder (1 teaspoon), mixing well to make sure that no lumps remain. Choose whether to use single-dose containers (like me) or a baking tray and... Now comes the fun part, because you will get your hands a bit dirty. Make a first layer of cream, then a layer of biscuits soaked in tea and so on. The last layer must obviously be of cream. Cover with a plastic wrap and put it to rest in the fridge. Sprinkle matcha on top before serving.
