Tahini granola

I love adding granola to my yogurt and smoothie bowls. This time I wanted to try an original recipe including Tahini, a Middle Eastern paste or spread made from ground sesame seeds (which is more commonly used to prepare homemade hummus).

Ingredients:
240 g rolled oats
50 g shredded coconut
20 g pumpkin seeds
10 g flaxseed
15 g of almonds
1 tsp salt
100 gr tahini
75 gr honey or maple syrup (if you like large chunk granola you should add more)
A part from oats, tahini and honey/maple syrup all the ingredients can be replaced or eliminated at your convenience.
Instructions
Mix tahini and honey in a bowl and all the remaining ingredients in another bowl. Then add the liquid components of the first bowl to the second one and mix well.
Transfer the tahini-oats mixture onto a parchment-lined baking sheet. Bake in the preheated oven at 180°C for approx. 30 minutes, stirring once or twice during baking. Make sure to keep an eye on the granola, so it doesn't burn.
Let it cool and then store it into an airtight jar. Enjoy it in yogurt, smoothie, açai bowls or eat it straight from the jar, but be careful, it's addictive!
